This is a quick and easy recipe. You must use fresh tomatoes and mix in some cherry tomatoes as well. Fresh cilantro is a must!

Summer Corn Salsa:
2 large red tomatoes
A handful of cherry tomatoes (red or yellow)
1 clove of garlic
1 ear of corn
1 small red onion
1 can of organic black beans
1 lime
fresh cilantro

Process the tomatoes, garlic, cilantro and red onion in a food processor, or chop finely. Cook the ear of corn and slice off the corn into a bowl, add the chopped tomatoes, onion and garlic. Add the black beans and squeeze in some lime juice. sprinkle with salt and cumin. Garnish with cilantro. Serve with corn tortilla chips! Enjoy,
