What You Need to Make Homemade Chicken Noodle Soup
Large pot or Dutch oven – I like to use a 6-quart enameled cast iron Dutch oven
Cutting board and knife
Measuring cups and spoons
Ingredients for Homemade Chicken Noodle Soup

Butter
Onion
Celery
Carrots
Garlic
Peas – I usually use frozen, but you can use fresh peas as well
Chicken broth – I like to make homemade chicken bone broth
Dried oregano
Dried thyme
Dried marjoram
Salt & pepper
Chicken – ideally from a whole chicken, but I use cooked chicken breast quite often as well
Pasta – preferably spiral-shaped, like rotini or fusilli. For the soup in the photos, I used organic tri-color fusilli.
How to Make Homemade Chicken Noodle Soup
Melt butter in a Dutch oven or large pot over medium heat. Add onion, carrots and celery and sauté until softened, about 5 minutes. Add garlic and frozen peas and cook another minute or two.

Stir in bone broth, dried herbs and salt and pepper. Bring the soup to a simmer, cover, and reduce heat to low. Cook 15-20 minutes, stirring occasionally.

Meanwhile, boil the pasta and drain. Dice the chicken into small pieces. Add the pasta and cooked chicken to the soup. Let the soup simmer for another 10-15 minutes before serving.

This soup gets better the longer all the ingredients cook together! If you have extra time, you can let the finished soup sit over very low heat, covered, up to a few hours. You may have to add more broth, as the noodles soak it up over time.

2 tbsp butter
1/2 onion, diced
2 whole carrots, peeled and chopped
2 stalks celery, chopped
3 cloves garlic, peeled and minced
1/2 cup frozen whole peas
6 cups chicken bone broth (I prefer homemade if possible)
1/2 tsp each of: dried oregano, thyme, and marjoram
salt and pepper, to taste
3 cups cooked chicken, diced in small pieces
