I don’t know about you, but I love a good peanut butter cookie! When I set out to make this recipe, I wanted that same delicious peanut butter flavor, but in a soft and chewy bar. Sorta like a peanut butter cookie, sorta like a brownie. Well, these bars hit that balance with just the right soft and chewy texture. I hope you like this recipe as much as I do!

Ingredients to Make Soft and Chewy Peanut Butter Bars

Butter – melted

Sugar

Vanilla extract

Eggs

All purpose flour

Peanut butter

Chocolate chips – totally optional, but peanut butter and chocolate is a heavenly combo!

Instructions

Preheat oven to 350 degrees. Lightly grease an 8×8 baking dish – I like to use coconut oil for this.

In a large mixing bowl, combine the melted butter, sugar and vanilla. Beat in eggs, mixing well until thoroughly blended.

In a separate bowl, stir together the flour and salt. Gradually stir the flour mixture into the peanut butter mixture, mixing well after each addition.

Stir in the chocolate chips (optional). Spread the batter evenly into the prepared baking dish. Bake for 35-40 minutes or until edges turn golden brown.

Variations

It’s always fun to change it up! Try these variations next time you make these Soft and Chewy Peanut Butter Bars.

Salted caramel chip – sub caramel chips for the chocolate chips in this recipe!

Crunchy peanut butter – use crunchy peanut butter instead of smooth peanut butter! Or, if you don’t have crunchy peanut butter, chop 1/2 cup of salted peanuts and add to batter toward the end of mixing.

PB&J – prepare batter like normal, excluding chocolate chips. Spread half the batter in the baking dish, then layer with your favorite jam or jelly. Spread the second half of the batter on top.
