Everyone loves a good banana muffin recipe. These muffins are buttery, rich and so moist – with that sweet banana flavor that’s irresistible. There’s one secret ingredient in these muffins that sets them apart from the rest, making them so soft and moist.

That secret ingredient? Sour cream. Combined with the classic ingredients like brown sugar, butter and of course, ripe bananas – this might just be your new favorite banana muffin recipe!

Tools to Make This Recipe

Stand mixer (if you don’t have one, a large mixing bowl and spoon will work just fine)

Muffin pan

Measuring cups and spoons

Ingredients

Butter, melted

Brown sugar

Egg

Vanilla

All purpose flour

Baking powder

Salt

Sour cream

Ripe bananas, mashed

Chopped walnuts (optional) – chocolate chips are also delicious!

Instructions

Preheat oven to 350 degrees. Prepare a 12-cup muffin tin with either paper liners, or by greasing the pan. I prefer to grease the pans, as I find the paper liners more trouble than they’re worth. I like to use coconut oil to grease the muffin cups.

In the bowl of a stand mixer fitted with a paddle attachment, blend melted butter and brown sugar together until smooth.

Add eggs and vanilla, mixing well. Stir in sour cream. Scrape down sides of bowl as necessary.

In a separate bowl, combine the flour, baking powder and salt. Add the dry ingredients to the egg mixture gradually, mixing well after each addition.

Stir in mashed banana and chopped nuts or chocolate chips. Pour batter into prepare muffin pan and bake for 16-18 minutes, or until a toothpick inserted in the center comes out clean.

Let the muffins cool in the pan for about 20 minutes, then remove and place on a wire rack to cool completely.

Can you freeze these muffins? Yes! I love to make muffins ahead of time and freeze them – they thaw quickly for an easy snack. Once cooled completely, you can freeze the muffins in an airtight container or freezer bag.

What bananas are best for making muffins? When it comes to banana muffins, the riper the bananas are, the better! If we don’t get to all the bananas before they’re turning brown and spotted, I just save them for banana muffins or bread.

Notes

  • You can substitute any type of chopped nuts for walnuts, or try another mix-in like chocolate chips. Or, exclude completely – banana muffins by themselves are delicious too!
