Quiche is such a versatile dish, it can be enjoyed any time of day. This quiche incorporates breakfast sausage, making it a delicious and filling breakfast dish.

I love an all-butter pie crust, especially for quiche. Flaky and buttery, it compliments the savory flavors in quiche so well. If you haven’t tried my sourdough pie crust recipe yet, it goes great with this quiche!

Quiche is such a versatile dish, it can be enjoyed any time of day. This quiche incorporates breakfast sausage, making it a delicious and filling breakfast dish.

Deep-dish pie plate – with 12 eggs, this recipe is designed for a deep-dish pie plate – don’t substitute with a regular pie plate!

Tips for Making Quiche

Prepare pie crust ahead of time and chill. This step is ideal for any pie crust, but I really recommend this with an all-butter pie crust. Butter crusts tend to sink down in the pan, so chilling prior to baking helps to combat this. Prepare the crust in the pan and chill at least 30 minutes before making quiche.

Place pie plate on a cookie sheet for baking. The butter crust can drip and make a mess in your oven, so I recommend placing the pie plate on a cookie sheet for baking.

Cover crust with foil towards the end of baking. If the pie crust starts browning too quickly, cover just the exposed edges of the crust with foil. I usually do this for the last 10-15 minutes of baking.

Cool at least 10 minutes before slicing and serving.

Sausage and Cheese Quiche Variations

The great thing about quiche is that it can be enjoyed any time of day, and there are so many ingredient combinations you can try!

Try switching out the breakfast sausage for a sausage more suitable for breakfast or dinner, like Italian sausage or Swiss sausage. You can also switch up the cheese to go with the sausage. Maybe mozzarella and parmesan to go with Italian sausage, or Gouda to go with Swiss sausage.

You could also add some more veggies for a lunch or dinner quiche. The options are endless! I love experimenting with flavor combinations, so have fun with it.
